Description
A reverse-seared burger is the wonderful and satisfying combination of a smoked burger and a seared burger all in one. Topped with grilled avocado and fresh habanero mango salsa. Ingredients
**Habanero Mango Salsa**
- 1 small Habanero pepper, diced
- 1 small mango, diced
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 tomatillo, peeled and diced
- 12-15 grape tomatoes, cut in fourths
- 1/2 fresh lime
- 2 Tablespoons cilantro, minced
**Grilled Avocados**
- 4-5 avocados, halved and pitted
- Olive oil
- Salt and pepper to taste
- 1/2 lime
**All Ingredients**
- 2 pounds ground beef
- Salt and pepper
- Hamburger buns
- Cheese, sliced
- Bacon, cooked (optional)

Instructions
Step 1: Form 6-8, 1/4 pound patties into a ball. Then, flatten till patties are about 1/4" thick.
Step 2: Salt and pepper to taste.
Step 3: Place patties on pre-heated smoker at 225 °F. Then smoke until the internal temperature is 10-15° under the desired finish temperature.
Step 4: Turn on the Sear Box and turn to medium heat, then sear patties to the desired temperature.
**habanero mango salsa**
Step 1: While the burgers are smoking, combine salsa ingredients in a medium bowl. Fill each avocado half with salsa. Top on burger or enjoy with corn chips.
**Grilled Avocado**
Step 1: Turn the pellet grill on low smoke. Cut avocados in half and remove pits. Squeeze fresh lime juice on avocado halves and then brush them with olive oil. Sprinkle with salt and pepper.
Step 2: Place the flesh side down on the warming rack and cook for 20 minutes on low smoke. Turn the sear box on medium heat. When avocados are done smoking, sear them for 2 minutes.
